"Meat" Sauce Penne



🍽 Chop onion & saute in a deep skillet until softened
🍽 Add "meat" and heat through
🍽 Add herbs & canned tomatoes 
🍽 Cook through for 5 minutes and add tomato sauce & spinach. Let spinach wilt and unthaw.
🍽 While sauce simmers boil penne pasta according to packaged directions.
🍽 Drain penne and add to sauce
🍽 Mix & serve!
🍽 Add a vegan parmesan on top if desired! 

🍅 1 lb penne pasta, cooked
🍅 1 yellow onion, chopped
🍅 1 cup "meatless" ground beef 
(I recommend Beyond Meat Beefless crumbles OR the Trader Joes Beefless ground beef)
🍅 1 tbsp oregano
🍅 1 tbsp thyme
🍅 1 tbsp basil
🍅 1 15oz can tomato sauce
🍅 1 15oz can stewed tomatoes
🍅 8oz frozen spinach
🍎 1 tbsp vegan parmesan (optional)
