Fully Loaded Pilaf



🍴1 cup of Angel Hair Pasta, broken      in 1- 2 inch pieces
🍴½ onion, diced
🍴½ bell pepper, diced
🍴1-2 garlic cloves, minced
🍴4-5 mushrooms, diced
🍴1 Zucchini, Chopped
🍴1 cup baby spinach, chopped
🍴2 cups Brown Rice, uncooked
🍴3 cups vegetable broth, low               sodium
🍴¼ cup liquid aminos, low sodium

🍽 Prepare ALL Veggies
🍽 Break up pasta into small inch long pieces.
🍽 Lightly toast uncooked pasta & rice in skillet. (This step is      really important! It really brings out the flavor!)
🍽 Add Uncooked Pasta, Rice & ALL Veggies into large pasta        pot with a lid.
🍽 Add veggie broth and liquid aminos.
🍽 Bring to a boil and then reduce heat to simmer.
🍽 Simmer for 25 minutes
🍽 Remove lid & from heat and drape clean kitchen towel           over pan and replace lid.
🍽 Let rest 5-10 minutes
🍽 Remove lid and towel and fluff with fork

Note: Pair this with your left over 1/2 of onion and bellpepper and some pita bread with hummus! YUM!
