Taco Tuesday Bowl

Ingredients

Directions

Black Bean & Rice Mix
🍚 2 Cups Brown Rice, Uncooked
🍚 2 Cups Black Beans, Uncooked
🍚 1 onion, chopped
🍚 4 cloves garlic, chopped
🍚 1 tablespoon chili powder
🍚 1 tablespoon onion powder
🍚 1/2 tablespoon cumin
🍚 1/4 teaspoon chili flake

Toppings
🥑 2 Cups Mixed Greens
🥑 1/2 Avocado, sliced
🥑 1/4 cup salsa
🥑 2 Tbsp vegan sour cream
🥑 2 green onions, chopped
🥑 2 white corn tortillas, sliced
🥑 1 Lime
🥑 1 tsp cumin
🥑 1/4 cup black olives, sliced
🥑 Dash of Red Pepper Flakes               (optional)

🍽 Prepare Black Bean& Rice Mixture (Instant Pot Directions:      Add all Ingredients to instant pot. Set MANUAL to 28            minutes. Let sit for additional 30 minutes while letting it        naturally release. This is very important to be sure the          beans and rice are cooked through entirely! This makes        more than enough. Adjust accordingly if you don't want        extra for the week!
🍽 Slice your tortillas into chip shapes. Spray with lime juice      and sprinkly on cumin. (Tip: By a travel spray bottle and        add lemon or lime juice to it! Keep in your refridgerator        for the week! Great way to not use oil!)
🍽 Place tortillas in Air fryer for 5-7 minutes checking on            them every 2 minutes and giving them a shake!
🍽 Make a bed of mixed green as your base.
🍽 Top with your ingredients! 
🍽 Enjoy!!!
