Mustard Potato Salad

Ingredients

Directions

Base
🥔 1 Yellow Onion, chopped
🥔 2 lbs Gold Potatoes, chopped
🥔 3/4 Cup Vegetable Stock
🥔 1 Cup Corn, frozen
🥔 1 Lemon
🥔 Cherry Tomatoes (optional)

Dressing
🍴1 tbsp Olive Oil
🍴1 tbsp Dijon mustard
🍴1 tbsp whole grain mustard
🍴1 tbsp White Wine Vinegar
🍴2 tbsp Cashew Butter
🍴1 -2 tbsp Thyme
🍴Pepper to taste



🍽 Set Instant Pot to "Saute".
🍽 Add Onions & Potatoes and saute for 3 minutes
🍽 Add stock & set Instant Pot to "Manual" for 3 minutes &        lock on lid.
🍽 Quick Release when done and add corn, replace lid and        let sit for 5 minutes for corn to unthaw.
🍽 For dressing, combine all ingredients and whisk!
🍽 Pour potato mixture into serving bowl & mix in dressing
🍽 If using, add in sliced tomatoes
🍽 Serve warm OR cold!
