"Egg" Salad Sandwich

Ingredients

Directions

🥄 1 can garbanzo beans, rinsed
🥄 1-2 Tablespoons Vegan Mayo
🥄 1-2 Tablespoons Mustard
🥄 2 Teaspoons Garlic Powder
🥄 2 Teaspoons Italian Seasoning        OR Dill
🥄 1 Teaspoon Turmeric
🥄 2-3 Tablespoons Nutritional            Yeast
🥄 1 Teaspoon Pepper
🥄 3 Tablespoons Green Onion,            chopped
🥄 2-3 Tablespoons Olives,                  chopped
🥄 1/2 Cup Quinoa
🥄 2 Tablespoons Carrots,                    shredded



Smash all garbanzo beans to the consistency you like. I like using a pastry cutter for this! (Feel free to substitute tofu for a much softer consistency!)

Combine ALL remaining Ingredients! Please feel free to substitute any veggies in this mixture! 

Serve on some toasted bread!
